Urge the Rabbinate to Uphold Promise to Phase Out "Shackle and Hoist"

Ask Alle Processing and OU Kosher to suspend their business relationships with Frigorifico Las Piedras until it uses less cruel methods involving proper restraining pens, and urge Chief Rabbi Metzger to fulfill the promise that he made two years ago to end the use of this cruel method among all South American companies that supply kosher meat to Israel.

Following public outrage over a 2007 PETA investigation of a kosher slaughterhouse in Uruguay, Israel's chief Ashkenazi rabbi, Yona Metzger, promised to phase out the "shackle and hoist" slaughter method.
More than two years later, a new PETA investigation of Frigorifico Las Piedras—the largest cattle slaughterhouse in Uruguay—reveals that this barbaric kosher slaughter method continues to be used to produce meat that's exported to both the U.S. and Israel.
In "shackle and hoist" kosher slaughter, cattle are tripped to the ground and forcibly restrained while their legs are chained. Panicked cows are turned upside down prior to slaughter while workers stand on their legs and use a sharp metal instrument called the "devil's fork" to pin their heads down and expose their necks for the kosher slaughter cut. After the cut, the cattle immediately are hoisted by one leg to be bled out—during this procedure, most of the animals are still conscious and able to feel pain.
Regarding the slaughter methods exposed in PETA's 2009 investigation of Frigorifico Las Piedras, Dr. Temple Grandin, the world's leading slaughterhouse expert, wrote the following:
"I watched the video. This plant is definitely doing the method of shackling the live bovine and then hoisting and dragging [the animal] out of the stun box and holding [the animal] down. This is a cruel, dangerous practice that should be stopped. This cruel method should be replaced with upright restraint."
The largest kosher meat company in the U.S., Alle Processing, gets much of its meat from Frigorifco Las Piedras, and this meat is certified by the Orthodox Union (OU), the largest kosher certification company in the U.S.
