Black-eyed Pea Sweet Potato Soup

Ingredients:

2 lbs. Black-eyed Peas, dried
3 cups Onions, diced
4 cups Sweet Potatoes, diced
2 – 6-oz. cans Tomato Paste
6 Bay Leaves
Cayenne Pepper or Hot Sauce, to taste (optional)

Preparation:

We make this black-eyed pea sweet potato soup recipe in our 6-1/2 quart slow cooker (Crock-Pot), which makes enough for a crowd, or for us for several days since it is great for leftovers, and can be stored in the refrigerator in the covered cooking pot for a few days. We love thick soups like this one, but this recipe can be made thinner by adding additional water while cooking. This recipe makes enough for about 8 adult meals or double that amount of servings as an appetizer.

We begin to prepare the black-eyed pea sweet potato soup the evening before we want to serve it.

Clean and wash the black-eyed peas and place in the cooking pot of the slow cooker along with 10 cups of cold tap water and the bay leaves, mix to level the beans, cover the pot, and set the temperature to “low,” and allow to simmer over night.

In the morning, wash, peel, and dice the onions, and add to the the slow cooker pot along with the tomato paste, and mix well.  If the soup is too thick, add another cup of water and mix well.

Wash, peel, and dice the sweet potatoes, and add to the slow cooker pot along with the cayenne pepper or hot sauce (optional, adjust to taste).  Mix well again, and add additional sweet potatoes and/or water to fill the pot to a half inch from the top and adjust the thickness.

It will take 4 or more hours of cooking on “low” to finish cooking the soup. When the black-eyed pea sweet potato soup is finished cooking, turn off the heat and mix again before serving.

Serve and enjoy with a large tossed salad.
