Rice – Un-Fried with Daikon, Oyster Mushrooms, Onions and Peas

Ingredients:

1 lb. Daikon
1 lb. Onions
1 lb. Peas, frozen
6-8 oz. Oyster Mushrooms
2 tsp. Ginger, ground
1 tsp. Garlic, crushed (optional)
Cayenne Pepper OR Hot Sauce, to taste
2 Dates, pitted
2 tbsp. Sesame Seeds
1/4 cup Soy Sauce OR Bragg Aminos
1 tbsp. Corn Starch
2-3 drops Smoke Flavor
2 cups Brown Rice cooked in 4 cups Water

Preparation:

This un-fried stir-fry Chinese style fried rice recipe will make about 6  servings, and can be made in a large covered dish in the microwave oven or in a  wok. Leftovers can be stored in the refrigerator in a covered container for a  few days, and won’t lose its flavor.

We begin by placing the rice pot on the stovetop with 4 cups of water and turning the heat to high until the water boils.

While the water is heating, we measure out the rice, and wash and peel the onions and daikon. Slice them into bite sized pieces and place in the covered dish or wok (if cooking in a wok, stir-fry in a little water).

When the rice water begins to boil, add the rice, cover, and lower the heat to simmer until all the water is absorbed into the rice.

Add the peas, ginger, and hot pepper to the onions and daikon and cook until the peas are thoroughly defrosted and begin to warm, mixing as necessary to insure uniform cooking, add the oyster mushrooms and continue cooking until the onions begin to become translucent.

While the veggies are cooking we place 3/4 cup of water in the container of a high speed blender, add the soy sauce, dates, sesame seeds, smoke flavor, and corn starch, cover the container, and run the blender at high speed until the contents are smooth.

When the veggies are cooked, thoroughly mix in the rice, and add the contents of the blender container with constant stirring until the sauce thickens. Cook for another minute or two if necessary.

Serve and enjoy.
