Tomato Vinaigrette

From PureJoyLivingFoods.com

  • 1 medium tomato, chopped (1 cup)
  • 1/4 cup flax or olive oil
  • 1 clove garlic
  • 1 tsp. raw apple cider vinegar or 2 tsp. lemon juice
  • 3/4 tsp. Himalayan Crystal Salt
  • 1/2 tsp. thyme
  • 1 Tbs. dried dill or 2 Tbs. fresh

Blend on high until creamy. Store in the refrigerator for up to 2 weeks in a glass jar.
