1. From Hog Farmer to Vegetarian

Diner Fred Leman, a 53-year-old central Illinois hog farmer who used to eat meat at nearly every meal and sugary snacks in between, is now a healthy vegetarian after battling cancer. His wife, Brenda, a licensed practical nurse who was enrolled in a one-year, long-distance program at the Institute for Integrative Nutrition in New York City, was the one who steered him in that direction when he was diagnosed with cancer.  Brenda learned tremendously by hearing lectures from leaders in the field of integrative nutrition including Dr. Andrew Weil, Dr. Walter Willett, Dr. Neal Barnard, Sally Fallon, Dr. Mark Hyman, Dr. Deepak Chopra and John Douillard among others. The evidence indicating meat and processed foods increase the risk of cancer is abundant. In a time where processed foods and cheap animal products are readily available it is harder to choose healthier foods; however, when we feed our bodies we need to remember that we are feeding God's creations and as such we have the responsibility and privilege to take care of them as best as we can. A well-balanced plant-based diet helps us achieve this goal.

Unfortunately, some big celebrities such as Angelina Jolie and Jessica Simpson are deceiving the public by stating untrue facts of plant-based diets. While any diet can be followed in an unhealthy and unbalanced manner, a plant-based diet can be a great choice for the majority of people if they learn how to easily get all the nutrients and calories from it in a delicious and satisfying way. Sometimes, in times of trials, we lose confidence when obstacles seem to obstruct our goals. However, perseverance in obedience to God leads to a fulfilling life.

5. More Good News about Plant-Based Diets

According to a new study that included 85,168 women from the Nurses’ Health Study and 44,548 men from the Health Professionals’ Follow-Up Study, a low-carbohydrate diet based on animal food sources increases mortality risk. Researchers found that a high-animal-food, low-carbohydrate diet was linked with higher all-cause mortality, including a higher rate of cancer deaths. A high-vegetable-food, low-carbohydrate diet was associated with lower mortality, especially reducing the risk of death from cardiovascular events. 6. This Week’s Video: Drs. Caldwell Esselstyn and Dean Ornish on CNN

Former US President Bill Clinton has openly talked about the plant-based he adopted and recent weight loss. He shared that his main motivation is to help his body heal from coronary heart disease. Since Mr. Clinton made a reference Drs. Caldwell Esselstyn and Dean Ornish, these two physicians were interviewed by CNN and asked about the benefits of a plant-based diet.
