Luscious Coconut Rice

A taste of Thai: Luscious Coconut Rice

A rich, decadent tasting rice dish to complement any Thai meal

Ingredients

1 14-ounce can coconut milk, regular or 'lite'

1 3/4 cup water

8 one-quarter-inch slices of peeled fresh ginger

1 tsp. salt

2 cups jasmine rice

2/3 cup coarsely chopped fresh cilantro leaves

Preparation

-Combine the coconut milk, water, ginger and salt in a saucepan, and bring to a rolling boil over medium heat. Add the rice, and stir. Cover, reduce the heat to low and cook for 25 minutes. Remove the saucepan from the heat and let stand, covered, for 10 minutes. Uncover and removed the ginger. Add the cilantro, and gently toss with a fork.
