Warm German Potato Salad
5 medium potatoes
1/4 cup olive oil
1/4 cup cider vinegar
1/2 cup water
2 Tablespoons sugar or other dry sweetener
1 Tablespoon flour
1/2 cup chopped onion
1/2 cup chopped celery
salt and pepper, to taste
vegan bacon bits, optional
- Bake potatoes.
- While potatoes are cooling, heat oil in skillet over medium heat.
Add vinegar and water, and heat to boiling. Stir in sugar and flour, and
stir constantly until thickened.
- Peel and chop potatoes, and place into serving bowl. Gently stir in
celery, onion, salt and pepper.
- Pour warm dressing over potato mixture. Sprinkle liberally with
vegan bacon bits, if desired. Serve warm.
