Aurelie's Super Quick 10 Minute Hearty Tomato Soup

Ingredients:
•3 cups tomato or vegetable juice
•1/4 cup prepared hummus
•1-3 cups frozen vegetable mix of choice
•1-3 cups cooked or drained and rinsed canned beans of choice
•Basil, cayenne or red pepper, black pepper, and Montreal steak
spice to taste
•Lemon juice to taste (optional)
Preparation:
In a medium or large-sized pot, whisk together the hummus and
vegetable juice with a whisk. Stir in the vegetables and beans and
bring the mixture to a boil, uncovered, over high heat.
Lower the heat to medium, partially cover, and simmer for 6 to 10
minutes or until vegetables are cooked. Season to taste and stir in
lemon juice. Serve! .
