Mark Bittman discusses in this excellent piece the reasons why
Americans seem to be eating less meat. In fact, the U.S. has seen a
decline of meat of about 12% in the last five years. Bittman believes
that the main reason is that people are becoming more conscious about
their food choices, but the meat industry blames this reduction on the
recession, drought, exports and ethanol production.

The increased exposure of the victimization of God’s animals has
awakened the consciousness of many people, who have realized that there
can be no peace on Earth if we continue to eat other beings, who exist
for their own reasons as a result of God’s creativity and love. The
vegetarian/vegan movement is essential if we are to call ourselves good
stewards of God’s Creation.
