Citation:
At 0900, I went to Mr. Robert Seugling Jr. to see if he was ready
for me to conduct Pre-Operational inspection. He replied that the
kill floor was ready so I entered the area and found the following
deviations. First, I observed the knives, scabbards and the chains
of the scabbards and found dried blood, meat and fat on all items. I
further looked over the hooks and found more dried blood, fat, and
hair on two hooks. I then went to Mr. Seugling and told him that a
Non-Compliance report would be issued for my findings.
Regulations:
416.13(c) Each official establishment shall monitor daily the
implementation of the procedures in the Sanitation SOP’s.
