Violation:  416.2(b)(1), 313.30, 416.13(c), 416.4(a)

Citation: While performing ISP procedure 01B02 (pre-operational sanitation inspection) at approximately 0720, after the establishment completed their pre-operational sanitation check the following noncompliance's were observed in the cutting room. 1) The band saw was found with meat and fat particles on the wheels that hold the blade and residue was found on the plastic blade covers. 2) Numerous knives being stored along the wall were found to contain meat and fat particles. 3) The guide of the grinder had a dry yellowish residue which when scraped fell onto the pan. 4) The hand held saw had meat and fat along the blade. Mr. was verbally notified of the multiple noncompliance's. At this time the cutting room was U.S. Rejected Tag# B37851149. A review of noncompliance's documented the previous 90 days did not reveal any with the same cause.

Regulation:

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

313.30(b)(2) Special requirements for electric current application equipment. The ability of electric current equipment to perform with maximum efficiency is dependent on its proper design and efficient mechanical operation. Pathways, compartments, current applicators, and all other equipment used must be designed to properly accommodate the species of animals being anesthetized. Animals shall be free from pain-producing restraining devices. Injury of animals must be prevented by the elimination of sharp projections or exposed wheels or gears. There shall be no unnecessary holes, spaces or openings where feet or legs of animals may be injured. Impellers or other devices designed to mechanically move or drive animals or otherwise keep them in motion or compartmentalized shall be constructed of flexible or padded material. Power activated gates designed for constant flow of animals shall be so fabricated that they will not cause injury. All equipment used to apply and control the electrical current shall be maintained in good repair, and all indicators, instruments, and measuring devices shall be available for inspection by Program inspectors during the operation and at other times.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
