Citation: During routine inspection activities on this date the following noncompliant conditions were observed and documented. Scale / Utility room; Area found to be noncompliant with within the Sanitation Performance Standards Regulations 416.1 - General Rules. Insanitary conditions observed include; room is a state of disarray / cluttered, numerous pieces of unused equipment and tools being stored on floor and elsewhere - many of which are rusty (old grinder parts, used saw blades, hand tools, etc). Numerous old and unused knives laying around, again in unsanitary condition (operational residues, rust, etc.), several old aprons - mildew present. Walls and shelving - in need of general cleaning and sanitizing (dust, dirt, etc). US Reject Tag Applied # B18812167. Also to note: Employee Restroom - Floor, walls, door, sink and commode - soiled - insanitary appearance. Continued I informed Mr. of the insanitary conditions observed and the need for corrective action as per 9 CFR 416.15. The above stated noncompliance is a failure of plant personnel to monitor non-production areas of the establishment and assurance that Sanitation Performance Standards Regulations are being met. A target date established for complete corrective actions to be completed - beginning of operations Tuesday 01/18.
416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.
416.2(h)(1) Dressing rooms, toilet rooms, and urinals must be sufficient in number, ample in size, conveniently located, and maintained in a sanitary condition and in good repair at all times to ensure cleanliness of all persons handling any product. They must be separate from the rooms and compartments in which products are processed, stored, or handled.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
