Citation: This afternoon (approx.1415hrs) while conducting a HACCP records review component for completeness of records associated with intact and non-intact raw product produced during the calendar week of Jan. 16, 2012 thru Jan. 20, 2012 I observed the following HACCP recordkeeping noncompliance. [newline] A review of the Pre-Shipment Review Log (HACCP 28) for the week indicated above showed entries for Lot ID, date, time of pre-shipment review and signature of plant personnel completed for the dates of Mon, Jan. 16th - with notation of "[redacted] ", Tues, Jan.17, Wed, Jan.18, and Thurs, Jan. 19; Noncompliance exist in the fact no entries had been entered for completion of a pre-shipment review for the date of Friday, Jan. 20, 2012. (See attachment) [newline] HACCP records for this week do indicate that [redacted]. [newline] I notified Mr. of my observations and the documentation of a noncompliance report for failure to complete required records for verification of the pre-shipment review on 01/20/2012. [newline][newline]Review of the Noncompliance Record File for the previous 90 days did not reveal any NR's with similar root cause.
417.5(c) Prior to shipping product, the establishment shall review the records associated with the production of that product, documented in accordance with this section, to ensure completeness, including the determination that all critical limits were met and, if appropriate, corrective actions were taken, including the proper disposition of product. Where practicable, this review shall be conducted, dated, and signed by an individual who did not produce the record(s), preferably by someone trained in accordance with §417.7 of this part, or the responsible establishment official.
