Citation: The following operational sanitation noncompliance was observed during slaughter operations on this date and documented with the writing of this NR. At approximately 10AM as a beef carcass was being moved into the carcass chill cooler from the killfloor, I observed a large area of condensate had formed on the cooler ceiling. The area of the ceiling involved was directly inside the doorway from the killfloor extending into the cooler for approx. 6 to 8 ft. in length and approx. 4 ft in width. I informed Plant Mgr. who was in the area at he the time of my observation of the noncompliant condition, joined me at the cooler, visually observing the condensation. Mr. nbsp;stopped the slaughter operation until the ceiling was wiped free condensate. Due to immediate corrective action by management and no evidence of product involvement; no tags were issued at this time. This noncompliance represents a failure by plant personnel in monitoring operational sanitation conditions during slaughter activities that could have the potential to contaminate product; not meeting the regulatory requirements of 9 CFR 413.13(c) and 416.2(b) or establishment written operational sanitation SSOP.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
