Citation: At approximately 1145 hrs I observed the following non-compliance. I manually took the temperature for raw not ground pork that was being packaged. I observed the temperature of the pork to be 48 degrees Fahrenheit. The plants HACCP plan states that [redacted]. The plant has failed to keep the product at an adequate temperature to prevent the growth of pathogens. After informing them of the increase in temperature I asked what they were going to do and they said they were going to finish packaging it. I told them that they cannot do that and that the temperature needs to be brought back into compliance. They then took the proper corrective action of re-chilling the product to an acceptable temperature. This document serves as notice of non-compliance within Federal Regulation 9 CFR 417.2(c)(5). 417.2(c)(5) Include all corrective actions that have been developed in accordance with 417.3(a) of this part, to be followed in response to any deviation from a critical limit at a critical control point;
