Citation: At approximately 1050 hrs I observed the following non-compliance. While in the slaughter floor I observed condensation falling from the ceiling. I placed U.S. Reject Tag NO. B39879072 in the area to stop production until the area could be brought back into compliance. I informed of the non-compliance and he proceeded to have the slaughter floor employees wipe down and remove the condensation. After this was done, the U.S. Reject tag was removed and slaughter resumed. Federal Regulation 9 CFR 416.2(d) states that there needs to be, "Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided." This document serves as notice of non-compliance within Federal Regulation 9 CFR 416.2(d).
