Citation: At approximately 1240 hrs while reviewing slaughter records I observed the following non-compliance. This morning at approximately 0800 hrs I observed , a plant employee, make a mixture used for the antimicrobial intervention step after the washing of bovine, ovine, and caprine carcasses as well as the SOP step for spraying along the midline on bovine before eviceration and splitting of the briskit. At 1240 hrs I went to check the antimicrobial intervention log and found no record of the wash being mixed. According to 9 CFR 417.5(b), "each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry." After I informed of the non-compliance she proceeded to have the entry completed as the corective actions procedure form states that it will be done. This document serves as notice of non-compliance within Federal Regulation 9 CFR 417.5(b).

Regulation:

417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
