Citation: While the EIAO performed an FSA (Food Safety Assessment) at Est. 4253 the following noncompliances were found. The review of the Raw Not Ground HACCP plan shows that the plan does not list the direct observation of corrective actions as a verification activity, a violation of 9 CFR 417.2(c)(7). The Verification Procedures Form states, "[redacted] ." Also, the Raw Not Ground HACCP plan does not list that no product injurious to health or otherwise adulterated as a result of the deviation enters commerce. This is noncompliant with 9 CFR 417.3(a)(4). The same noncompliances aforementioned are observed in the Raw Ground HACCP Plan.

Regulation:

417.2(c)(7) The contents of the HACCP plan. The HACCP plan shall, at a minimum: List the verification procedures, and the frequency with which those procedures will be performed, that the establishment will use in accordance with 417.4 of this part.

417.3(a)(4) The written HACCP plan shall identify the corrective action to be followed in response to a deviation from a critical limit. The HACCP plan shall describe the corrective action to be taken, and assign responsibility for taking corrective action, to ensure: No product that is injurious to health or otherwise adulterated as a result of the deviation enters commerce.
