Citation: At approximately 1315 hrs I observed the following non-compliance. In the slaughter floor while slaughtering pigs I observed condensation falling from the ceiling above the de-hairer. I took a regulatory control action and stopped the slaughter line from continuing slaughter until the slaughter floor personnel could move the pig that was on the de-hairer and then wipe the condensation off of the ceiling. After they moved the pig and wiped the area of condensation and rinsed the equipment, I inspected the area to make sure that the condensation was not taken care of and not falling anymore. After I confirmed this I allowed slaughter to resume. No product was affected because the hogs were still whole and they would still be rinsed and singed before they were finally inspected and pushed into the cooler. This document serves as notice of non-compliance within Federal regulation 9 CFR 416.2(d).
416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
