Citation: Beginning at 0710 hrs while performing pre-operational inspection I observed the following non-compliances. In the processing room I found several chunks of meat and fat particles on 2 sets of scabords and knives (contact). There were also what appered to be debris on the underside of the rails for the main table in the processing room (non-contact). No U.S. tags were applied because after each piece of equipment that was found to be in non-compliance was immediately re-cleaned by a plant employee. In the slaughter floor I found 2 carts that had chunks of meat stuck in the wheels (non-contact). I also found 3 large stainless steel tubs with product particles and fat residue in them (contact). In the head was cabinent there were 2 offal holders that had blood left on them from previous days usage as well as what appeared to be fat particles in the head was cabinent (contact). No U.S. tags were applied because after each piece of equipment that was found to be in non-compliance was immediately re-cleaned by a plant employee. This document serves as notice of non-compliance within Federal Regulations 9 CFR 416.4(a), 416.4(b) and 416.13(b).

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
