Citation: Today at approximately 0710 while performing a pre-operational inspection I observed the following non-compliance.[newline][newline]In the processing area I found several pieces of fat/ meat particles on the band saw (Contact). There was also dried fat/meat particles stuck to the pan that catches the saw dust in the band saw (Non-contact). I found a large piece of fat on the large scale on the south wall (Contact). USDA Reject tag was NO.B39879017 was applied to the large scale, the band saw and the band saw’s tub. I then informed a plant employee ) of the non-compliant areas. He proceeded to re-clean all the equipment. After the rejected equipment was re-cleaned, I re-inspected the equipment and found it to be back in compliance. I then released the equipment back to the establishment.[newline][newline]In the slaughter area I found fat build up and fat pieces on two cart that are used to hold tubs of product/ product (Contact). I also found small pieces of what appeared to be debris and small pieces of product particles in the bottom of a small stainless steel tub (Contact). USDA Reject tag was applied NO.B39879018 was applied to the two carts and the stainless steel tub. I then informed a plant employee ) of the non-compliant areas. He proceeded to re-clean all the equipment. After the rejected equipment was re-cleaned, I re-inspected the equipment and found it to be back in compliance. I then released the equipment back to the establishment.[newline][newline]

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
