Citation: At approximately 0715 while performing pre-operational inspection I found the following non-compliances. In the retail area that was being used for inspected product today I found several areas with fat and meat build up on the band saw and band saw pieces. There were also meat particles on the outside of the band saw (contact/non-contact). In the processing room there were several pieces of meat and meat particles on the outside of the grinder (non-contact). In the slaughter area there was still hair on the de-hairer from the previous day's slaughter of swine (non-contact). No U.S. Reject tags were applied because the machines were immediately re-cleaned and re-inspected upon notifying the plant that the machines were out of regulatory compliance with sanitation standards.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
