Citation: On 03/24/2011 at approximately 8:30 am while performing the SPS component for an unscheduled 01C01 task at Establishment 04265M, the following non compliance was observed in the plants beef cooler. A carcass older than 30 months (SRM) was not marked or tagged accordingly as to identify the carcass as being a SRM. The establishments Standard Operating Procedures for addressing Bovine Spongiform Encephalopathy (BSE) Harvesting sections 4 & 5 states: [redacted]. This is a violation of 9 CFR 310.22 (E) (1) which states in part: "Establishments that slaughter cattle and establishments that process the carcasses or parts of cattle must develope, implement, and maintain written procedures for the removal, segregation, and disposition of specified risk materials. A check of the of the Establishments SOP's and HACCP plan did not reflect any other non compliances at this time. Mr. was notified at approximately 8:45 am of these conditions, in which he took immediate actions and corrected the non compliance. Therefore there was no regulatory control tag used in this situation. A review of past NR's indicated there has been no non compliance in this area of concern. You are advised verbally and by this written of your right to appeal.
