Citation: On 04/15/2011 at approximately 11:35 am while performing an unscheduled 06D01 of the facilities storage room across from the inspection office, I observed the following noncompliance. The hooks used for the overhead rail system stored and hanging to the left just before entering into the storage room, showed considerable signs of rust on the trolley wheels and support structure that connects to the hooks. After examination I concluded the rust was not loose and flakey to the point of falling off, but would wipe off easily when touched. I then entered the coolers to observe the hooks in use, and found some of them to be in the same condition. I then examined the hanging carcasses and found no adulterated or contaminated product. However, if conditions of this equipment is left unchecked it would soon lead to product contamination. In lieu of the following regulations this noncompliance must be corrected: Reg. 416.4(b) states: Non- food contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and adulteration of product. Reg. 416.4(d) states: Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments. QC Manager was notified of these findings both verbally and with this written notice. After a review of the establishments SSOP records I did not find any mention of this noncompliance. A review of past NRs indicated there has been no noncompliance in this area of concern. You are advised verbally and by this written document of your right to appeal.

Regulation:

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
