Citation: At approximately 10:55 am while conducting a late morning inspection of the facilities coolers, I noticed a condensation build up on the external bottom part of the compressor in the beef cooler adjacent to the processing room. Several large droplets of condensation had formed and evidence of dripping was noticeable on the coolers floor. Carcasses were hanging in close proximity to the drip age but no contamination or adulteration of product was evident of this situation. However the conditions left uncorrected could soon result in a condition to cause a contamination of product. This condition must be corrected per following regulations. 416.2(d) Ventilation. Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided. 416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments. A review of the plants SSOP records did not mention this noncompliance. I notified and Mr. of this noncompliance both verbally and with this noncompliance document.

Regulation:

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
