Citation: During the course of the FSA, the EIAO observed the following: the suggested supporting documentation indicated an application of the at solution temperature of . However, the establishment is using the spray stored at 40øF. The firm failed to address the step of holding carcasses after the final wash/ intervention and prior to chilling. My direct observation during the course of the FSA determined that carcasses are held for the entire day of operation at ambient temperature to enhance the quality and tenderness of meat according to Mr., HACCP Coordinator. However, the firm failed to add this step into the process and perform a hazard analysis determining the likelihood of bacteria growth during this point of the process. This is a noncompliance with 9 CFR 417.5(a)(1).
