Citation: During the course of a Food Safety Assessment conducted by EIAO from September 7th through October 17th the following noncompiances were observed at Locust Grove Farm. While reviewing the facilities HACCP plan it was noticed that the plant failed to inclued the following steps in the hazard analysis and flow chart. 9 CFR 417.2(a)(2). The harvesting of editible variety meats such as tongue, heart and liver, and also failed to include the steps of zero tolerance trim, and organic acid spray of variety meats.

Regulation:

417.2(a)(2) A flow chart describing the steps of each process and product flow in the establishment shall be prepared, and the intended use or consumers of the finished product shall be identified.

417.6 A HACCP system may be found to be inadequate if: (a) The HACCP plan in operation does not meet the requirements set forth in this part; (b) Establishment personnel are not performing tasks specified in the HACCP plan; (c) The establishment fails to take corrective actions, as required by 417.3 of this part; (d) HACCP records are not being maintained as required in 417.5 of this part; or (e) Adulterated product is produced or shipped.
