Citation: On Dec.13th 2011 at approximately 8:25am while conducting pre operational duties in the slaughter area here at Locust Grove, I noticed the exhaust fan had a build up around the exterior frame of cob webs. If this condition left unchecked it could cause a possible insanitary food safety concern. This also is in violation of 9 CFR 416.1, 416.13(a), and 416.4(b). I pointed out this condition to Mr. who then took immediate corrective action and removed the cob webs before starting slaughter procedures. After reviewing the plants non compliance records I found no recent non compliance of this area of concern. You are notified verbally and by this written document of your right to appeal.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
