Citation: On 9/28/2010, at approximately 1400 hours, while performing a scheduled 01B02 procedure, the following non-compliance was observed on the processing room: fat/meat residue, from a previous production, adhered to the inside of the holes of the grinding plate on the small meat grinder. I applied U.S. Rejected Tag No. B3773922 to the grinder. I notified Mr. and immediate corrective action was taken by cleaning and sanitizing the plate. I removed the U.S. Rejected Tag after conditions were brought into compliance. This document serves as a written notice that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
