Citation: On this date at approximately 0845 hours while performing a scheduled 01C02 procedure, the following non-compliances were observed: Processing operations were being conducted, but there were no entries indicating the temperature of the freezer, room and cooler entered on the processing Temperature Monitoring Log. The frequency indicated on the log and in the establishment's plan is that . Temperatures were subsequently taken and recorded prior to completion of the processing operations and were acceptable. The last entry to the Thermometer Calibration Log indicates that the instrument was last calibrated 02/16/2011. The establishment's plan requires calibration to be performed a minimum of per . The thermometer was immediately calibrated with no adjustment required. No product was compromised and no adulteration occurred.
