Citation: On this date at approximately 1500 hours while performing an unscheduled 06D01 procedure, the following non-compliance was observed: A piece of meat approximately two inches by one inch was found on the bracket which mounts the motor to the body of the band saw. The back side of the fence (guide) was streaked with fat residue. Non-food-contact surfaces of equipment must be cleaned and sanitized to prevent the creation of insanitary conditions and the adulteration of product. There was no product involved and no adulteration occurred. I notified Mr. verbally and Mr. with this written notice. This document serves as written notification that failure to comply with regulatory requirements could result in additional regulatory or administrative action.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
