Citation: Tuesday, January 25, 2011 while reviewing the establishment's Prerequisite Program for E. coli 0157:H7, I observed the following non-compliance. I discovered that the establishment didn't update their Prerequisite Program for E. coli 0157:H7 to reflect the guideline of the Robust Testing Method. When informed of the non-compliance Mr. Simon (plant owner) replied he was using the Robust Testing Method which is recommended by the FSIS for swabbing beef carcasses, but forgot to document it. Plant management need to comply with the FSIS regulation 9 cfr 310.25(a).
