Citation: During the Comprehensive Food Safety Assessment conducted at this Establishment by EIAO [redacted], the following Hazard Analysis Critical Control Point (HACCP) Noncompliance was observed. While reviewing the Process Control Steps (PCS), the following steps-- [redacted] are not listed in the Beef Flow Chart Diagram. These steps are listed in the Beef Slaughter HACCP Plan and also the Hazard Analysis. The flow chart does not correlate with the Beef Slaughter HACCP Plan and Hazard Analysis. The requirements of 417.2(a)(2) of the Meat & Poultry Regulations have not been met. There have not been any Noncompliances of the same root cause observed in the previous 90 days. Mr. has been notified verbally and in writing with this Noncompliance Record.
417.2(a)(2) A flow chart describing the steps of each process and product flow in the establishment shall be prepared, and the intended use or consumers of the finished product shall be identified.
