Citation: At approximately 0700 hours the following deficiencies were observed in the processing area of the establishment. Freezer Doors 1 and 2 both had product residue from the previous days production on therm. The product residue was observed along the sides and above the door handles on both doors. The backs of the two stainless steel cutting tables are beginning to have a product residue build up on them. This is a failure to comply with regulations 9 CFR 416.1 and 416.4(b) This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
