Citation: At approx. 0710 while performing a 01B02 in the kill floor area I observed the following conditions, the two (2) white power cords used as a power supply to the well saw (brisket saw) have a bloody/fatty residue on them. The hoist (red) located closest to the cooler door in the kill floor area has multiply rust bubbles on the bottom and sides of it. The hoist used for skinning and gutting lambs located next to the inedible room and the hoist next to the cooler, both handles have a fatty residue build up around the cables and nuts and bolts used to attach the handle. At this time I notified plant manager of my findings verbally and with this non-compliance report.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
