Citation: On July 6, 2010 while performing post-mortem inspection, I have found the following noncompliance. After beef carcass #2 was presented to me for inspection, I found fecal, hair and ingesta on the brisket, front shank, and under the shoulder. On the final rail, prior to entering the cooler, I preformed a zero tolerance check on carcass number 3. On this carcass, I found fecal, and or ingesta under the front shoulder and there was still spinal cord left intact. , HACCP Manager/Kill Floor Supervisor was immediately notified and he instructed that employee remove it. US Retained Tag # B28365921 was applied to the 1/2 carcass. Tag was removed after contamination and spinal cord was removed. , Plant Manager has been informed of this noncompliance. This document serves as a written notification that failure to comply with regulations could result in further regulatory and or administrative actions. Past Similar NRs - Previous Ineffective Plant Actions: employee was instructed to trim all needed areas of carcasses before washing. NR: 37-2010 dated 4/15/2010

Regulation:

310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
