Citation: On July 7, 2010 while performing the above procedure, a review of the establishment was conducted and the following noncompliance's were found: On the small animal slaughter floor: There are numerous spots on the support beams that are covered in white flashing that has peeling and or flaking caulking, and there is one light fixture that is missing a bulb and has a wire hanging out of it. The base of the viscera table had peeling paint and or peeling rust. Directly in front of the sink and to the left of it there is peeling paint. In the hook room: There is no drain cover over the drain, numerous cobwebs through out the entire room, a black moldy substance on the table, rusty rails, and on the back of the door that leads onto the small animal slaughter floor is rusty, there is a hole in it, and the metal frame is coming off. Hook room was reject tag. Tag # B18815306. In the employee bathroom: there were cigarette buts on the floor, contamination on the wall of the shower, numerous dead insects, and blood smears on the door. Bathroom was rejected with Reject tag # B19113731. In the basement: there were dirty garments on the steps and on the floor. There is a pipe that is directly behind the washer that has an unidentifiable orange substance on it. Water is dripping off of the pipe, onto the substance, then on to the floor. There is a blue cart that has garbage in it, along with cobwebs. There are numerous cobwebs and dead insects throughout the entire basement area. Underneath the garage door there is small gap that is a potential entry for pests and or rodents. There is also an area that has numerous carts, and other objects that is cluttering up the room, and is not allowing for inspection to take place. There are numerous pipes that have condensation dripping from them. On the Large Beef Slaughter Floor: The knocking pen had rusty and or paint chipping off it and has holes in it. The beef cradle has holes, the welds have cracks allowing for bacteria to build up and has rust on it. There are numerous rails that have rust on them. In the inspection office bathroom: The sink is leaking water onto the floor. , Plant Manager has been informed of these noncompliance's in both writing and orally. This document serves as a written notification that failure to comply with regulations could result in further regulatory and or administrative actions.
416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
416.2(b)(3) Walls, floors, ceilings, doors, windows, and other outside openings must be constructed and maintained to prevent the entrance of vermin, such as flies, rats, and mice.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
