Citation: On July 20, 2010 while performing the above procedure I have found the following noncompliance: On NR#0066-2010-12907 that is dated 7/19/2010 the further planned action states "We shall double our monitoring procedure for zero tolerance from one per twenty carcasses to one per ten carcasses for a period of three days." This response was presented to FSIS on 7/20/10. Upon reviewing the Slaughter Inspection Report record dated 7/19/2010, it is unclear what is documented as being slaughtered. The record indicates that there were [redacted] lambs slaughtered and then another [redacted] lambs and the Carcass I.D. Checked were [redacted]. Goats are also checked off as being slaughtered and no head count is documented. Upon reviewing FSIS records, there were [redacted] lambs and [redacted] goats slaughtered. Also, underneath the daily verification activities there is no Carcass ID or findings documented for monitoring verification/observations for CCP 1 & 2, although it is documented as to who verified this with a time and date. , Plant Manager has been informed of these noncompliance's in both writing and orally. This document serves as a written notification that failure to comply with regulations could result in further regulatory and or administrative actions.
417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
417.3(a)(3) Measures to prevent recurrence are established; and
