Citation: On July 23, 2010 while performing the above procedure, I found the following noncompliance. There was an >30 beef carcass slaughtered and an employee used the saw for cutting the brisket, he then dipped it in the sterilizer. I looked at the saw and there was still numerous pieces of fat and/ or meat particles on the saw. He was then going to use the saw to cut the brisket of an <30 months beef. I immediately notified of this noncompliance and the employee was instructed to completely clean all of the visible contamination off of the saw before using it on the < 30 months of age beef. I had complete control of the product, as the saw did not come in contact with it. 9CFR310.22(f)(1)(ii) states " (ii) Clean and sanitize equipment used to cut through specified risk materials before the equipment is used on carcasses or parts from cattle younger than 30 months of age." , Plant Manager has been informed of this noncompliance in both writing and orally. This document serves as a written notification that failure to comply with regulations could result in further regulatory and or administrative actions.
