Citation: On September 19, 2011 while performing final inspection I found the following noncompliances. At approximately 1200 hours I inspected a beef carcass and found feces on the flank and also in the inside of the flank. On the top of the rump, there was also a piece of gray material that appeared to be a piece of paint chipping. Both were trimmed, and I immediately showed this to both Mr. and Mr. At approximately 1326 hours while inspecting the last beef carcass at the final inspection, I found that the tail of the carcass had feces on it. I informed the employee and the tail was immediately removed from the carcass. [newline][newline]A previous similar noncompliance (XVH2610081316N) was issued on August 2, 2011, and remains open at this time due to an inadequate response.

Regulation:

310.18(a) Carcasses, organs, and other parts shall be handled in a sanitary manner to prevent contamination with fecal material, urine, bile, hair, dirt, or foreign matter; however, if contamination occurs, it shall be promptly removed in a manner satisfactory to the inspector.
