Citation: On October 4, 2011 at approximately 1150 hours I reviewed your Slaughter Inspection Report (DOC. # JHM-FORM-003) and found the following noncompliance:
The record was documented that Zero Tolerance (CCP 1B) checks were being performed, but the species/offal was not yet documented. I immediately informed and he stated to me that this was not filled out because "he was unsure of what the establishment was going to be slaughtering next." I informed Mr. that the species needed to be documented as they are slaughtered and checked for Zero Tolerance (CCP 1B).
417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
