Citation: At approximately 7:30 am I was asked by the HACCP monitor [redacted] to preform a pre operational inspection on the large animal floor. Upon inspection for the spinal cord remover I noticed pieces of fat and blood and what appeared to be rust on the device and rust on the hook were it was hanging. Inspection of the electrical cord and connection device to the split saw I noted several pieces of fat,hair and a bloody build up. On the handwash sink located on the floor I noted on the underside a large amount of bloody buildup, on the carcass cradle I noted a large amount of blood, hair, hay and buildup on the front of the frame. All deviancies were addressed to the HACCP monitor [redacted] who directed the recleaning of these areas to company employees. These areas were then recleaned and I reinspected them before releasing the floor to production. I notified HACCP monitor that I would be writing a NC at this time.
416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.
