Citation: At approximately 8:00 am while performing Pre. Op inspection in the small kill floor I noticed a large water leak coming from the ceiling above the area by the handwash sink, the water was falling on an I-beam above a transfer rail. This issue had not been addressed prior to my inspection. The room was  retained  with U.S. Rejected tag # B 19 113955. This is in violation of  regulations 9CFR 416.13 and 416.14. After establishment took corrective action by hanging plastic to divert the water off the rail the area was reinspected and released, the retain tag was removed and the establishment was allowed access to the room for production. was notified of this non compliance.

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.14 Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOP’s and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel.
