Citation: On this date at approximately 0900 hours I decided to take a look at the completed records for the Plant's RTE products. When I got to the charts for the products covered under the Heat Treated-Shelf Stable products I found that the plant had not calibrated it's Water Activity Meter in 2010 and the PH meter has not been calibrated also in 2010. The last calibration of the water activity meter that I could find was in 11/09. I could find no calibrations for the PH meter being documented even after reviewing records 3 times. Under the verification column of CCP B5 it states, "." Under the verification column of CCP B4 it states, " ." I then brought this to the attention of my Supervisor and he informed me he had watched the calibration of the water activity meter on 4/30/10 but the IT chart for that date is not noted that it was performed and the results of the calibration. I informed of the non-compliances with 417.4(a)(2)(i) and 417.5(b)

Regulation:

417.4(a)(2)(i) Ongoing verification activities. Ongoing verification activities include, but are not limited to: The calibration of process-monitoring instruments;

 417.5(b) Each entry on a record maintained under the HACCP plan shall be made at the time the specific event occurs and include the date and time recorded, and shall be signed or initialed by the establishment employee making the entry.
