Citation: On this date at approximately 0745 hours while performing the scheduled pre-operational inspection after the establishment personnel had completed their inspection I found the following non-compliances: Kill Floor- The splitting saw and its power cord was found with fat, blood, fecal material and bone dust from the previous day's operations. The washing and sanitizing of the splitting saw was completed under USDA inspection prior to use so no reject tag was required. Smokehouse room: the stainless steel table to the right of the entrance door was found with product residues and meat pieces from the previous day's operations on the product contact areas and there was cobwebs on the underside of the table. was shown the non-compliances with 9 CFR 416.13(a) because review of plant records had no mention of the non-compliances. Past similar NRs- Previous Ineffective Plant actions: new person assigned to clean slaughter floor equipment NR 7-2010 dated 6/04/2010

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.
