Citation: At approximately 1030 while performing a cooler check Dr. and I found the following non compliance in the chill cooler off the slaughter floor. One Carcass marked not for sale on a separate rail from Inspected carcasses was touching inspected carcasses on separate rail, the carcasses had been pushed together by a metal tub containing not for sale bellies. Mr. was informed of this noncompliance and the tub was pushed aside so that the carcasses were no longer touching. This is a violation of 9CFR 303.1(2)(2)(ii) which states, " If the custom operator prepares or handles any products for sale, they are kept separate and apart from the custom prepared products at all times while the latter are in his custody." Mr. was informed that failure to follow the regulations can result in further regulatory control actions.
