Citation: While I was performing an unscheduled pre-operational sanitation check at approximately 0750 I observed the following noncompliance. The Carcass splitting saw was found to have dried fat, blood and bone particles from the previous days production. US Retain/Reject tag # B39600602 was applied to the splitting saw and Mr. was informed of this Noncompliance. Operations for the day had not begun so no product involved, Mr. Cleaned and sanititized the saw immediately and production was allowed to begin. Mr. was informed that this is a failure to follow 416.4(a) of the regulations. And that continued failure could result in further regulatory control action. Past Similar NRs - Previous Ineffective Plant Actions: Cleaning person notified NR: 20-2010 dated 9/2/2010
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
