Citation: At approximately 1100 hours while I performed an unscheduled Facilities and Equipment verification check. The following noncompliance was observed in the chill cooler and holding coolers. In the Chill cooler the Rails are showing signs of rust, and rail dust, 2 carcasses were found to have evidence of rail dust on the brisket and flank. The carcasses were immediately trimmed. In the Boning cooler the high beams show signs of possible flaking paint and rust, and the rails have old grease and rail dust. No carcasses were observed with rail dust contamination. This is a violation of 9CFR 416.2(b)(2) which states "Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions." TriTowns SSOP states that . Mr. was informed of this noncompliance and it was explained to him that failure to follow the regulations can result in further regulatory control action.
