Citation: At approximately 08:55 I entered the plants inedible room during a unscheduled pre-op inspection. At that time I observed the room to have inedible materail stored in the room from the prior days operation. The room had inedible product debris, ingesta, blood ,and hides as a result of no cleanup from the prior days operation. The adjoining loading dock was found to have stored inedible and discarded cardboard and papers. While notifying of this non-compliance an employee from the processing room passed through this area allowing for his clothing and equipment to be contaminated. The inedible room and adjoining loading dock was tagged B39600652. Your SSOP states that [redacted]. The reg. 416.13 (a,b,c) states the establishment shall conduct the pre-operation procedures in the sanitation SOP`s before the start of operations. Total downtime 7:45 to 09:15.No product was affected

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOP’s at the frequencies specified.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
