Citation: At 0830 while performing Preoperational check of the equipment on the slaughter floor I observed the following non compliance. The Viscera/Pluck Cart was found to have blood and fat residue measuring approximately 4 inches by 1 inch on the back of the removable tray, on further inspection the cart was rolled and the under side showed blood and fat covering the wheel wells on both sides. US retain reject tagB39600698 was applied to the cart and Mr. was informed of this noncompliance. A records check revealed that the plants preoperational check had not found this deficiency. This is a violation of 9CFR 416.13(c) which states" Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's. Failure to comply with regulation can result in further regulatory control actions.
